![]() ![]() The other day I was questioning if ice cream season is still going on…then I drove past our local ice cream shop and it was PACKED.Timing is everything in healthcare - yet too often diagnoses, treatments and procedures are held up by paperwork, administrative red tape between patients, clinicians, carers, bookkeepers, insurance companies and others in the chain of relationships that needs to be processed before steps can be taken. Since everyone has to stand 6 feet apart these days, the line was almost around the block. So yeah, I think ice cream is still going strong, which means it’s time for one more ice cream recipe before summer ends and fall squash takes over. Maybe I’ll just make a spaghetti squash ice cream and keep summer going the best I can. So I’m about to take a SHARP left turn on ya. ![]() Over the weekend, I had the house ALL to myself while my husband was away on a bachelor’s party. Mostly because I could watch all the true crime documentaries I wanted. My isn’t much of a true crime fan…or really a documentary fan. He falls asleep in 46 seconds as soon as I put a documentary on. And this weekend I finally watched The Murder of Laci Peterson on Hulu. Before I thought Scott Peterson absolutely did it, but then after watching this documentary, I was reminded that I had the viewpoint solely based on what the media had said.Īnd it has me looking at life from a totally different angle. I knew nothing about the trial or details from both sides. I based my opinion on what the media said and that was that. But now, after watching that podcast, I really have no clue. And I don’t think I should have an opinion because of it. It was just such an interesting moment because really no one knows if he did it or not, but people don’t like the unknown so they just make the decision for themselves in order to not feel uncomfortable. The only person who I would trust to tell the truth is McKenzie, since she was the last one seen with Laci. Dogs are the only people I trust, anyways. Ya know? There’s just something about enjoying a cold dish of homemade ice cream on a warm night! It tastes wonderful, and is easy to prepare. I get inspired to drag out my trusty, beloved Cuisinart ice cream maker and get busy in the kitchen! It’s been fun making ice cream using this machine, because you do not need rock salt OR ice to freeze the ice cream. I found this delicious recipe for homemade Rocky Road Ice Cream online at “Taste Of Home”. Because of those yummy ingredients, it’s a real taste treat! How Much Rocky Road Ice Cream Will This Recipe Make? The recipe sounded pretty “spot on”, so I decided to give it a try, and now it is one of my favorite homemade ice creams! Rocky road ice cream is a chocolate based ice cream, packed full of marshmallows, chocolate chips and pecans. The original rocky road ice cream recipe makes just over 4 quarts (using a standard sized ice cream maker). Those are the ingredient quantities I have listed here in the printable recipe below. If you want to make the full recipe, simply refrigerate the extra until ready to freeze another batch later in the day or the next day! When I made this rocky road ice cream, I simply halved the recipe to work in my smaller indoor ice cream maker. Hope you enjoy making some great homemade ice cream this summer!
